A few months ago, when both of my teenage daughters decided to become vegans, I was concerned about how they would get the nutrients they needed from a solely plant-based diet. I wanted to understand the ethical reasons for their choice to eliminate meat from their diet and to locate materials to ensure the family would be eating tasty, nutritious meals.
